Ingredients
For the Daliya
- 1 cup Broken Wheat daliya, rinse thoroughly before soaking
- 2 cup Water for soaking the daliya
For the Vegetable Mixture
- 1 Carrot finely chopped
- 1/2 cup Beans finely chopped, green
- 1/2 cup Cottage Cheese crumbled
- 1/2 cup Cheese any type you prefer, grated
- 1.5 tbsp Coriander Leaves (dhania), chopped
- 1.5 tsp Salt adjust to taste
- 1 tsp Garam Masala ground
- 1 tsp Chaat Masala ground
For Binding
- 1 tbsp Corn Flour
- 1 tbsp Rice Flour
For Frying
- Oil for deep frying
Instructions
Prepare the Daliya
- Soak the broken wheat in 2 cups of water for at least 30 minutes, or until softened.
Prepare the Vegetable Mixture
- In a large bowl, combine the softened and squeezed daliya, crumbled paneer, chopped carrots, green beans, grated cheese, coriander, salt, garam masala, and chaat masala. Mix well to combine all ingredients.
Bind and Shape
- Add the cornflour and rice flour to the vegetable mixture. Mix gently until just combined. Do not overmix. Shape the mixture into small, oval kababs.
Fry the Kababs
- Heat oil in a deep pan or kadai over medium heat. Carefully place the kababs in the hot oil and fry until golden brown and crispy on all sides. Ensure the oil is hot enough to avoid the kababs absorbing too much oil.
Serve
- Remove the kababs from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite chutney or dip.
