Ingredients
 

For the Quinoa

  • 1/2 cup Quinoa rinse thoroughly before using.
  • 1 tbsp Ghee clarified butter; can substitute with unsalted butter

For the Kheer

  • 2 cup Milk whole milk recommended for creaminess
  • 2 tbsp Milk Powder
  • 1/4 cup Sugar adjust to your sweetness preference
  • 1/4 tsp Cardamom Powder ground cardamom; for stronger flavor, use 1/2 teaspoon

Prepare the Quinoa

  • Roast the quinoa in 1 tablespoon of desi ghee for 2-3 minutes until lightly fragrant. Soak the roasted quinoa in 1/2 cup of water for 15 minutes.

Cook the Quinoa

  • Bring the soaked quinoa and remaining 1/2 cup water to a boil in a saucepan or pressure cooker. Reduce heat and simmer for 5-7 minutes, or until the quinoa is tender but not mushy. Drain any excess water.

Make the Kheer

  • In a heavy-bottomed saucepan, combine the cooked quinoa, milk, milk powder, sugar, and cardamom powder. Stir well to combine.

Simmer and Thicken

  • Bring the mixture to a gentle boil over medium heat, then reduce heat to low and simmer for 20-30 minutes, stirring frequently to prevent sticking and burning. The kheer should thicken considerably.

Add Nuts and Raisins

  • Stir in the chopped almonds, cashews, and raisins during the last 2-3 minutes of simmering.

Serve and Enjoy

  • Remove from heat and let the kheer cool slightly. Serve warm or chilled, garnished with extra chopped almonds or nuts. Enjoy!
