Ingredients
 

For the Quinoa

For the Vegetable Mixture

  • 1/2 cup Vegetables chopped carrots, and broccoli. you can also use other frozen or fresh mixed vegetables., mixed, peas
  • 1 Potato boiled and mashed
  • 1 cup Spinach finely chopped (palak)
  • 1 Onion finely chopped
  • 2 Chili finely chopped (adjust to taste), green

Spices & Seasoning

  • 1 tsp Chaat Masala
  • 1/4 tsp Garam Masala or a general indian spice blend of your choice. adjust amount to taste.
  • 1 tbsp Oil for shallow frying
  • 1.5 tsp Salt or to taste
  • 2 tbsp Corn Flour for binding
  • 2 tbsp Coriander for garnish (optional)

Instructions
 

Prepare the Quinoa

  • Cook quinoa according to package directions. Fluff with a fork and set aside to cool.

Prepare the Vegetable Mixture

  • In a large bowl, combine the cooked quinoa, mixed vegetables, mashed potato, spinach, onion, green chilies, chaat masala, garam masala, salt, and cornflour. Mix thoroughly until well combined.

Shape and Fry the Kebabs

  • Form the mixture into small patties or kebabs. The size is up to your preference.

Cook the Kebabs

  • Heat oil in a non-stick pan over medium heat. Carefully place the kebabs in the pan and cook for 2-3 minutes per side, or until golden brown and heated through.

Serve

  • Garnish with fresh cilantro (optional) and serve hot with your favorite chutney or sauce. Enjoy!
