Ingredients
For the Quinoa Mixture

- 2 tbsp Corn Flour
- 1/2 cup Coriander dhania; finely chopped
- 1/4 tsp Chaat Masala
- 1/4 tsp Garam Masala
- 1.5 tsp Salt or to taste
For Frying
- 2 tbsp Oil for shallow frying
Instructions
Prepare the Quinoa
- Rinse the quinoa thoroughly under cold water. Bring 1 cup of water to a boil in a saucepan. Add the quinoa and reduce heat to low. Simmer for 15 minutes, or until all the water is absorbed. Fluff with a fork and set aside to cool.
Cook the Vegetables
- While the quinoa cooks, finely chop the spinach and mixed vegetables. In a separate pan, sauté the chopped green chilies for a minute until fragrant. Add the spinach and mixed vegetables, stir-frying until slightly wilted.
Combine Ingredients
- In a large bowl, combine the cooked quinoa, sautéed spinach mixture, mashed potato, cornflour, coriander, chaat masala, garam masala, and salt. Mix thoroughly until well combined.
Shape and Fry the Kebabs
- Shape the mixture into small patties or kebabs. Heat the oil in a non-stick pan or tawa over medium heat. Gently place the kebabs in the pan and fry for 2-3 minutes per side, or until golden brown and crispy. Apply a little more oil in between if needed.
Serve
- Serve hot with your favorite chutney or sauce.
