Ingredients
 

For the Quinoa Mixture

  • 1 cup Quinoa
  • 1 cup Water for cooking quinoa
  • 1 bunch Spinach palak; roughly chopped
  • 1 medium Potato boiled and mashed
  • 2 Chili finely chopped, green
  • 1/2 cup Vegetables carrots, corn), mixed, optional; finely chopped (e.g., peas

Prepare the Quinoa

  • Rinse the quinoa thoroughly under cold water. Bring 1 cup of water to a boil in a saucepan. Add the quinoa and reduce heat to low. Simmer for 15 minutes, or until all the water is absorbed. Fluff with a fork and set aside to cool.

Cook the Vegetables

  • While the quinoa cooks, finely chop the spinach and mixed vegetables. In a separate pan, sauté the chopped green chilies for a minute until fragrant. Add the spinach and mixed vegetables, stir-frying until slightly wilted.

Combine Ingredients

  • In a large bowl, combine the cooked quinoa, sautéed spinach mixture, mashed potato, cornflour, coriander, chaat masala, garam masala, and salt. Mix thoroughly until well combined.

Shape and Fry the Kebabs

  • Shape the mixture into small patties or kebabs. Heat the oil in a non-stick pan or tawa over medium heat. Gently place the kebabs in the pan and fry for 2-3 minutes per side, or until golden brown and crispy. Apply a little more oil in between if needed.

Serve

  • Serve hot with your favorite chutney or sauce.
