Ingredients
 

Dry Ingredients

  • 1 cup cup Rice flattened rice; also known as aval
  • 1/2 cup cup Chickpea also known as bhuna chana, roasted, split
  • 2/3 cup cup Jaggery powder
  • 1/4 cup cup Nuts almonds, cashews, mixed, walnuts — chopped
  • 3 pods Cardamom finely ground, green cardamom pods

Prepare the Poha and Chana Dal

  • Dry roast the poha and chana dal in a pan over low heat for 5-7 minutes, stirring frequently, until lightly golden and fragrant. Let cool completely.

Toast the Nuts

  • Melt the ghee in a small pan over low heat. Add the chopped nuts and toast for 2-3 minutes, or until fragrant and lightly golden. Remove from pan and set aside.

Grind the Ingredients

  • In a blender or food processor, combine the cooled poha, chana dal, jaggery powder, toasted nuts, and ground cardamom. Pulse until a coarse powder forms. Do not over-process; some texture is desired.

Make the Ladoos

  • Gradually add the ghee to the powder, mixing well until a dough-like consistency forms. If the mixture is too dry, add a little more ghee, one teaspoon at a time. If it is too wet, add a little more poha.

Shape the Ladoos

  • Roll the mixture into small balls (ladoos). Use your hands to shape them.

Store the Ladoos

  • Store the ladoos in an airtight container at room temperature for up to a week.
