Ingredients

- 1 cup Bajra Flour pearl millet flour
- 1/2 tsp Mustard Seeds rai
- 1 tsp Cumin Seeds jeera
- 1/4 tsp Asafoetida hing
- 1.5 tsp Salt or to taste
Vegetables
- 1/2 cup Peas fresh or frozen, green
- 1 Onion finely sliced
- 1 Chili finely sliced, green
- 1 tbsp Ginger finely chopped
- 2 sprigs Curry Leaves
Instructions
Prepare the Pea Filling
- Heat olive oil in a pan. Add mustard seeds and let them splutter. Add cumin seeds, asafoetida, and curry leaves. Sauté for a minute until fragrant.
- Add sliced onions and green chilies. Sauté until onions soften and turn translucent.
- Stir in finely chopped ginger and green peas. Add salt and cook for 2-3 minutes until peas are tender.
- Add 3/4 cup of water, bring to a simmer, then remove from heat.
Make the Dough
- In a large bowl, combine the bajra flour and the pea mixture. Gradually add water while mixing until a soft, pliable dough forms. Knead for 2-3 minutes until smooth.
- Divide the dough into 4-5 equal-sized balls. Cover with a damp cloth to prevent drying.
Cook the Rotis
- Heat a flat griddle or tawa over medium heat. Take one dough ball and gently roll it into a thin circle using a rolling pin. Lightly dust the rolling surface with flour to prevent sticking.
- Place the rolled roti on the hot griddle. Cook for 1-2 minutes per side, or until small bubbles appear and the roti is cooked through. Lightly brush with oil while cooking for a softer texture.
- Repeat the process for the remaining dough balls.
Serve
- Serve the hot Peas Bajra Rotis with raita or your favorite chutney.
