Ingredients
For the Makke ki Roti:
- 1 cup Maize Flour makke ka atta
- 1/2 tsp Salt
- 1/4 tsp Carom Seeds ajwain
- 2 tbsp Spring Onions chopped, green leaves
- 1/2 cup Water approximately, as needed for dough consistency
For the Snow Peas and Eggplant Sabzi:
- 200 gm Snow Peas trimmed and chopped, valor (gujarati)
- 100 gm Eggplant baigan/brinjal, diced
- 2 tbsp Oil vegetable or canola oil
- 1/4 tsp Asafoetida hing
- 1/2 tsp Cumin Seeds
- 1/2 tsp Salt to taste
- 1/2 tsp Chili Powder red
- 1/4 tsp Turmeric Powder
Instructions
Preparing the Snow Peas and Eggplant Sabzi
- Heat oil in a pan or kadai. Add cumin seeds and asafoetida; sauté briefly until fragrant.
- Add diced eggplant and snow peas. Stir well.
- Add salt, red chili powder, and turmeric powder. Mix thoroughly.
- Cover and cook for 10-15 minutes, or until the eggplant is tender.
Making the Makke ki Roti
- In a bowl, combine maize flour, salt, carom seeds, and chopped spring onions.
- Gradually add water, mixing until a soft, pliable dough forms. Knead well for a few minutes.
- Divide the dough into small balls.
- Roll each ball into a thin, round roti.
- Heat a flat griddle or tawa over medium heat. Cook each roti on both sides until lightly browned and cooked through.
Assembling and Serving
- Place the cooked Makke ki Roti on a plate. Top with a spoonful of the Snow Peas and Eggplant Sabzi.
