Ingredients
Dry Ingredients
- 1 cup Bajra Flour
- 1 cup Semolina suji
- 1 1/2 tsp Salt or to taste

- 1 cup Yogurt curd
- 1/2 tsp Baking Soda
Instructions
- In a mixing bowl, combine the bajra flour, semolina, and salt.
- Add the yogurt and mix well to form a smooth batter. Add a little water, a tablespoon at a time, if needed to achieve the desired consistency. The batter should be thick but pourable.
- Cover the bowl and let the batter rest for 30 minutes. This allows the grains to absorb the liquid and soften, resulting in fluffier idlis.
- Lightly grease an idly steamer mold with oil or cooking spray. This prevents the idlis from sticking.
- Just before steaming, whisk the batter again and add the baking soda. Mix gently. The baking soda reacts with the acidic yogurt to create air bubbles, which makes the idlis light and airy.
- Pour the batter into the greased idly molds, filling each about three-quarters full.
- Steam the idlis for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
- Let the idlis rest for a few minutes before carefully removing them from the molds.
