Ingredients
For the Paneer Tikka
- 250 gm Cottage Cheese cubed into 1-inch pieces
- 5 tbsp Greek Yogurt
- 1/2 tbsp Ginger-Garlic Paste
- 1/2 tsp Coriander ground
- 1/2 tsp Cumin ground
- 1/2 tsp Garam Masala
- 1/4 tsp Turmeric Powder
- 1/4 tsp Chaat Masala
- 1 tsp Chili Powder red
- 1 tsp Lemon Juice
- Salt to taste
- Oil for greasing
For the Whole Wheat Rotis
- 1 cup Whole Wheat Flour whole
- 1/4 tsp Salt
- Water as needed
- 1 tsp Oil + extra for cooking rotis
For Assembling the Kathi Rolls
- 1/2 cup Cabbage shredded
- 1/2 cup Bell Peppers capsicum, thinly sliced
- 1/2 cup Carrot thinly sliced
- 1/2 cup Onion red, thinly sliced
- 4 tbsp Chutney green
- 1 tsp Chaat Masala
- 1 tsp Lemon Juice
- Salt to taste
Instructions
- In a mixing bowl, combine the Greek yogurt, ginger-garlic paste, ground coriander, ground cumin, garam masala, turmeric powder, chaat masala, red chili powder, lemon juice, and salt.
- Add the cubed paneer to the marinade and gently toss to coat evenly. Cover the bowl and refrigerate for at least 30-45 minutes. This allows the paneer to absorb the flavors of the marinade.
- In a separate bowl, combine the whole wheat flour and salt. Gradually add water, mixing until a smooth and soft dough forms. Knead the dough for a few minutes until it becomes pliable.
- Add 1 teaspoon of oil to the dough and knead for another couple of minutes. This helps to make the rotis softer. Cover the dough and let it rest.
- In a bowl, combine the shredded cabbage, sliced bell pepper, sliced carrot, sliced red onion, lemon juice, chaat masala, and salt. Toss well to combine.
- Heat a non-stick pan or griddle over medium heat and lightly grease it with oil. Add the marinated paneer and cook, turning occasionally, until it's lightly browned and cooked through. This usually takes about 8-10 minutes.
- Divide the rested dough into 4 equal portions. Roll each portion into a thin, circular roti on a lightly floured surface.
- Heat a flat griddle or tawa over medium heat. Place a roti on the hot tawa and cook for about 30 seconds per side, or until lightly browned and cooked through. Brush with a little oil while cooking for added flavor and softness.
- Spread green chutney evenly over each roti. Place a portion of the cooked paneer tikka in the center of the roti, followed by a generous helping of the vegetable filling.
- Sprinkle with a pinch of salt. Fold the sides of the roti inwards and tightly roll it up. Secure the roll with a toothpick or wrap it in wax paper.
- Serve the delicious and healthy Paneer Tikka Kathi Rolls immediately.
