  • 6-8 Roti use whole wheat or all-purpose flour. store-bought are fine!
  • Optional Cheese cheddar or mozzarella, for kids, grated

Instructions
 

Prepare the Tofu Filling

  • Cut the tofu, bell peppers, tomatoes, and onion into small, roughly 1/2-inch cubes.
  • Heat oil in a large pan or kadai over medium heat. Add fennel seeds and let them splutter for a few seconds.
  • Add the chopped onions and sauté until they turn light golden brown.
  • Add the chopped tomatoes and a pinch of salt to help them release their moisture; cook until slightly softened.
  • Stir in the bell peppers, chili powder, coriander powder, garam masala, cumin seeds, and salt. Cook for 2-3 minutes, stirring frequently.
  • Add the cubed tofu and tomato sauce. Mix everything well and cook for another 3-5 minutes until heated through and the flavors have melded. Remove from heat.

Assemble the Kathi Rolls

  • Spread a portion of the tofu masala onto one corner of each roti.
  • If desired, sprinkle grated cheese over the filling.
  • Carefully roll up the roti, tucking in the sides to create a tight roll.
  • Serve immediately and enjoy!
