Ingredients
For the Tofu Filling
- 250 gm Tofu firm or extra-firm; also known as soya paneer. press tofu to remove excess water before cubing.
- 1 medium Onion finely chopped
- 3 Bell Peppers assorted colors (red, green), thinly sliced, yellow
- 2 Tomato finely chopped
- 1 tbsp Tomato Sauce
- 1 tsp Chili Powder
- 2 tsp Coriander Powder
- 1 tsp Garam Masala
- 2 tsp Cumin Seed
- 1 tsp Fennel Seed also known as saunf
- 1 tsp Salt to taste
- 2 tbsp Oil vegetable or canola oil
Instructions
Prepare the Tofu Filling
- Cut the tofu, bell peppers, tomatoes, and onion into small, roughly 1/2-inch cubes.
- Heat oil in a large pan or kadai over medium heat. Add fennel seeds and let them splutter for a few seconds.
- Add the chopped onions and sauté until they turn light golden brown.
- Add the chopped tomatoes and a pinch of salt to help them release their moisture; cook until slightly softened.
- Stir in the bell peppers, chili powder, coriander powder, garam masala, cumin seeds, and salt. Cook for 2-3 minutes, stirring frequently.
- Add the cubed tofu and tomato sauce. Mix everything well and cook for another 3-5 minutes until heated through and the flavors have melded. Remove from heat.
Assemble the Kathi Rolls
- Spread a portion of the tofu masala onto one corner of each roti.
- If desired, sprinkle grated cheese over the filling.
- Carefully roll up the roti, tucking in the sides to create a tight roll.
- Serve immediately and enjoy!
