- 100 gm Cauliflower
- 1/4 cup Onion red
- 1/4 cup Carrot
- 1/4 cup Peas frozen, thawed
- 1/4 cup Bell Peppers (red, or green), yellow
- 1 1/2 leaves Mint Leaves for garnish, fresh

- 1 large Egg
- 2 tbsp Olive Oil
- 1 1/2 tsp Salt or to taste
- 2 tbsp Coconut Aminos
Instructions
- Remove the core from the cauliflower and cut it into florets. Check the florets carefully for any insects.
- Wash the cauliflower florets thoroughly. Pulse them in a food processor or hand blender until they resemble rice grains. Be careful not to over-process.
- Finely dice the red onion, bell pepper, and carrot. If using frozen peas, thaw them completely.
- Heat the olive oil in a large skillet or wok over medium heat. Add the diced red onion and sauté for 3-4 minutes, until softened and translucent.
- Add the diced carrot and bell pepper to the skillet. Sauté for another 3-4 minutes, until slightly tender.
- Add the riced cauliflower to the skillet. Sauté for 5-7 minutes, until the cauliflower is tender-crisp. This allows the cauliflower to soften while still retaining some texture.
- Stir in the coconut aminos, a savory and slightly sweet alternative to soy sauce. This adds a rich umami flavor to the dish.
- Crack the egg into the skillet and scramble it with the vegetables. Cook until the egg is set.
- Season with salt to taste. Garnish with fresh mint leaves before serving.
