Ingredients

- 2 tsp Vegetable Oil
- 1 medium Cardamom green, lightly crushed
- 1 stick Cinnamon
- 1 Bay Leaf
- 2 Cloves

- 1 cup Samai Rice thoroughly rinsed
- 2 cup Water
- 1/2 tsp Salt or to taste
Garnish
- 1/4 cup Coriander freshly chopped
Instructions
Sautéing the Aromatics
- Heat oil in a pan or pot over medium heat. Add the cardamom, cinnamon, cloves, and bay leaf. Sauté for a few seconds until fragrant.
Stir-frying the Vegetables
- Add the chopped onion, green chilies, curry leaves, carrot, green beans, and green peas. Stir-fry until the vegetables soften slightly and turn a light brown color, about 5-7 minutes.
Adding Rice and Water
- Pour in 2 cups of water and add salt to taste. Bring the mixture to a boil.
Simmering the Pulao
- Add the rinsed Samai rice, stir gently to combine, and bring back to a boil. Reduce heat to low, cover the pan tightly, and simmer for 10-12 minutes, or until the rice is cooked through and the water is absorbed. Do not lift the lid during cooking.
