  • 2-3 Chili finely chopped, green
  • 5-6 Curry Leaves
  • 1 medium Carrot finely chopped
  • 1/2 cup Beans green, trimmed and chopped
  • 1/2 cup Peas fresh or frozen, green

Instructions
 

Sautéing the Aromatics

  • Heat oil in a pan or pot over medium heat. Add the cardamom, cinnamon, cloves, and bay leaf. Sauté for a few seconds until fragrant.

Stir-frying the Vegetables

  • Add the chopped onion, green chilies, curry leaves, carrot, green beans, and green peas. Stir-fry until the vegetables soften slightly and turn a light brown color, about 5-7 minutes.

Adding Rice and Water

  • Pour in 2 cups of water and add salt to taste. Bring the mixture to a boil.

Simmering the Pulao

  • Add the rinsed Samai rice, stir gently to combine, and bring back to a boil. Reduce heat to low, cover the pan tightly, and simmer for 10-12 minutes, or until the rice is cooked through and the water is absorbed. Do not lift the lid during cooking.

Resting and Serving

  • Remove from heat and let the pulao rest, covered, for 5 minutes. Fluff gently with a fork.
