Instructions

  • Thoroughly wash the spinach, discarding the stems.
  • Blanch the spinach in boiling water with lemon juice for 1-2 minutes. The lemon juice helps preserve the vibrant green color.
  • Drain the spinach and set aside.
  • Blanch the fenugreek leaves (methi) in the same way and set aside.
  • Soak the soy granules in warm water for 10 minutes to soften them.
  • In a blender or food processor, combine the blanched spinach, methi leaves, green chilies, roasted split chickpeas, and salt. Blend into a smooth paste without adding water.

Recipe Notes

Good To Know

  • Adjust the amount of green chili and salt according to your preferred spice level.
  • You can use either soya chunks (meal maker) ground into powder or soya granules.
  • For extra crispy tikkis, lightly dust them with a mixture of rice flour and semolina before shallow frying.
  • For a gluten-free version, replace brown bread with mashed boiled potatoes or gluten-free oats.
  • To enhance the dip, soak almonds in hot water for 30 minutes, peel them, and blend with a few drops of lemon juice.
  • Leftover tikkis can be crumbled and used as a filling in wraps or sandwiches.

Expert Tips

  • For a richer flavor, try marinating the soya chunks in a mixture of ginger-garlic paste, yogurt, and spices before grinding.
  • Serve the tikkis with a side of fresh mint chutney or a cooling raita for a balanced meal.
  • If you don't have semolina, you can substitute it with cornstarch or fine breadcrumbs for the crispy coating.

Storage Instructions

  • Store leftover tikkis in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or oven until warmed through.
