Ingredients
Dry Ingredients
- 0.75 cup Whole Wheat Flour whole
- 0.5 cup Rolled Oats powdered oats, or pulse rolled oats in a food processor until finely ground
- 0.25 cup Flaxseed Meal approximately 25 grams
- 0.25 cup Jaggery powdered or finely grated
- 1 tsp Salt or to taste
Wet Ingredients
Optional additions
- 1 tbsp Sesame Seeds for added flavor and texture
Instructions
Prepare the Dough
- Mix together whole wheat flour, powdered oats, flaxseed meal, jaggery, and salt in a large bowl.
Combine Wet and Dry Ingredients
- Cut in the butter (or ghee) using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add milk, mixing until a soft dough forms. If the dough is too dry, add a teaspoon of milk at a time; if it's too sticky, add a tablespoon of flour.
Shape and Bake
- On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Use cookie cutters to cut into desired shapes, or simply use a knife to cut into squares or rectangles. Prick the crackers several times with a fork.
Baking Instructions
- Place crackers on a baking sheet lined with parchment paper. Bake in a preheated oven at 320°F (160°C) for 12-14 minutes, or until the edges are lightly golden brown. Keep a close eye to prevent burning.
Cooling and Serving
- Remove from the oven and let the crackers cool completely on a wire rack before serving. Store in an airtight container at room temperature for up to a week.
Recipe Notes
Expert Tips for Perfect Crackers
- For a nuttier flavor, toast the oats in a dry pan before adding them to the dough.
- If you don't have jaggery, you can substitute with an equal amount of brown sugar or maple syrup. Adjust the amount of milk accordingly.
- Experiment with different spices! A pinch of cinnamon, nutmeg, or cardamom would add a lovely warmth to the crackers.
- To ensure even baking, make sure your crackers aren't overcrowded on the baking sheet. Allow space between each cracker for air circulation.
