Instructions

Prepare the Dough

  • Mix together whole wheat flour, powdered oats, flaxseed meal, jaggery, and salt in a large bowl.

Combine Wet and Dry Ingredients

  • Cut in the butter (or ghee) using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add milk, mixing until a soft dough forms. If the dough is too dry, add a teaspoon of milk at a time; if it's too sticky, add a tablespoon of flour.

Shape and Bake

  • On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Use cookie cutters to cut into desired shapes, or simply use a knife to cut into squares or rectangles. Prick the crackers several times with a fork.

Baking Instructions

  • Place crackers on a baking sheet lined with parchment paper. Bake in a preheated oven at 320°F (160°C) for 12-14 minutes, or until the edges are lightly golden brown. Keep a close eye to prevent burning.

Cooling and Serving

  • Remove from the oven and let the crackers cool completely on a wire rack before serving. Store in an airtight container at room temperature for up to a week.

Recipe Notes

Expert Tips for Perfect Crackers

  • For a nuttier flavor, toast the oats in a dry pan before adding them to the dough.
  • If you don't have jaggery, you can substitute with an equal amount of brown sugar or maple syrup. Adjust the amount of milk accordingly.
  • Experiment with different spices! A pinch of cinnamon, nutmeg, or cardamom would add a lovely warmth to the crackers.
  • To ensure even baking, make sure your crackers aren't overcrowded on the baking sheet. Allow space between each cracker for air circulation.
