- 1/4 cup Flaxseed Meal ground flax seeds
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
Wet Ingredients
- 4 Bananas medium size, ripe
- 1/2 cup Honey
- 1/2 cup Vegetable Oil
- 1 tsp Vanilla Extract
Optional additions
- 2-3 tbsp Melon Seeds
- 1/2 cup Chocolate Chips optional
Instructions
Prepare the Oven and Ingredients
- Preheat oven to 350°F (180°C). Grease a standard loaf pan with oil.
Combine Dry Ingredients
- In a medium bowl, whisk together the whole wheat flour, flaxseed meal, baking powder, baking soda, and salt. Set aside.
Mash Bananas and Combine Wet Ingredients
- In a separate large bowl, mash the ripe bananas thoroughly. Add the honey, oil, and vanilla extract. Mix well until fully combined.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Be careful not to overmix. Stir in melon seeds (and chocolate chips, if using).
Bake the Banana Bread
- Pour the batter into the prepared loaf pan. Tap the pan gently to remove any air bubbles. Sprinkle additional melon seeds (or chocolate chips) on top, if desired.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
