Ingredients
For the Muesli Layer
- 1/2 cup Muesli readymade muesli
- 1/4 cup Nuts such as raisins, almonds, and pumpkin seeds, mixed
- 1 tbsp Chocolate Chips
- 1 tbsp Honey
- 1 tbsp Blackstrap Molasses adjust to your preferred sweetness
- 1 tbsp Butter melted
For the Paneer Custard
- 1 cup Milk low-fat milk
- 1/2 cup Cottage Cheese grated
- 1/2 tbsp Custard Powder
- 2 tbsp Sugar Substitute or to taste. use your preferred brand.
- 1 tbsp Sweetened Milk sugar-free preferred, condensed
- 1/2 tbsp Cardamom Powder
- 1/2 cup Brownie crumbled, ready-made; optional
- 1 tbsp Poppy Seeds roasted
Instructions
Prepare the Muesli Layer
- Dry roast the muesli and mixed nuts in a pan for 5 minutes until fragrant.
- Add honey, molasses, chocolate chips, and mix well.
- Remove from heat and stir in melted butter.
- Let cool slightly and press into the bottom of individual serving bowls or ramekins.
- Refrigerate for 15 minutes.
Make the Paneer Custard
- Boil milk in a saucepan until slightly reduced.
- Add grated paneer and stir until melted and smooth.
- In a small bowl, whisk together the custard powder and a little cold milk until smooth.
- Gradually whisk the custard mixture into the boiling milk and paneer mixture, stirring constantly to prevent lumps.
- Continue to stir until the custard thickens, about 5-7 minutes.
- Remove from heat and stir in the sugar substitute and sweetened condensed milk. Add cardamom powder.
Assemble and Chill
- Spoon the paneer custard evenly over the muesli layer in each bowl.
- Top with crumbled brownie (optional) and a sprinkle of roasted poppy seeds.
- Refrigerate for at least 1 hour to allow the pudding to set completely.
- Serve chilled and enjoy!
