Ingredients
 

Dry Ingredients

  • 1 cup Muesli ready-made muesli. can substitute with a mix of rolled oats, and seeds., nuts
  • 1/2 cup Rolled Oats use if not using pre-made muesli
  • 1/4 cup Nuts And Seeds almonds, mixed, pumpkin seeds, sunflower seeds – use your favorites, walnuts
  • 1/4 cup Fruit raisins, chopped apricots – use your favorites, cranberries, dried
  • 1/4 cup Chocolate Chips
  • 2 tbsp Pumpkin Seeds optional, adds extra crunch and nutrition.

Wet Ingredients

  • 1/4 cup Sugar brown
  • 2 tbsp Honey
  • 2.5 tbsp Blackstrap Molasses adjust to your preferred sweetness. can add up to 1 extra tablespoon.
  • 2 tbsp Ghee or unsalted butter; adds richness and helps bind the cookies.

Instructions
 

Prepare the Muesli

  • Dry roast the muesli (or oat mixture) in a pan for 5 minutes, stirring frequently, until lightly toasted.

Combine Dry and Wet Ingredients

  • Add the brown sugar to the toasted muesli and remove from heat.
  • Add the honey, blackstrap molasses, chocolate chips, and pumpkin seeds. Mix thoroughly until well combined.
  • Let the mixture cool slightly before adding the melted ghee/butter. Stir to combine.

Bake the Cookies

  • Preheat oven to 350°F (175°C). Lightly grease a muffin tin.
  • Spoon the muesli mixture into the muffin tin, pressing gently to compact.
  • Bake for 12-15 minutes, or until the edges are golden brown and the cookies are set.

Cool and Serve

  • Remove from oven and let the cookies cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
  • Once cooled, refrigerate for at least 30 minutes to firm up. Serve and enjoy!
