Instructions

Prepare the Baking Pan

  • Grease a baking sheet or line it with parchment paper and set aside.

Combine Ingredients

  • In a medium saucepan over low heat, melt the peanut butter. Remove from heat and stir in the honey, cocoa powder, vanilla extract, and salt. Mix until well combined.

Add Muesli

  • Add the muesli (or oats) to the peanut butter mixture and stir until evenly distributed. The dough will be quite thick.

Shape the Cookies

  • Lightly oil your hands. Take approximately 1 tablespoon of dough for each cookie. Roll into balls, then flatten slightly to form cookies. Place them onto the prepared baking sheet.

Optional: Add Chocolate Chips

  • If using white chocolate chips, press a few onto the top of each cookie.

No-Bake Option

  • For no-bake cookies, refrigerate the cookies for at least 30 minutes to firm up before serving.

Bake the Cookies (Optional)

  • For baked cookies, preheat your oven to 350°F (180°C). Bake for 6-8 minutes, or until the edges are lightly golden. Keep a close eye on them as they can burn easily.

Cool and Serve

  • Remove the cookies from the oven and let them cool completely on the baking sheet before serving. If adding chocolate chips after baking, do so while the cookies are still slightly warm so they melt slightly.

Storage

  • Store unbaked cookies in the refrigerator for up to 3 days. Store baked cookies in an airtight container at room temperature for up to a week.

Recipe Notes

Expert Tips for Perfect Eggless Chocolate Muesli Cookies

  • For extra chocolatey flavor, use dark cocoa powder instead of unsweetened cocoa powder.
  • If your dough is too sticky, add 1-2 tablespoons of additional muesli or oats to achieve desired consistency.
  • Feel free to experiment with other mix-ins! Dried cranberries, chopped nuts, or seeds would be delicious additions.
  • To make these cookies even healthier, use whole wheat flour or oat flour in place of some of the muesli.
