Ingredients
- 8 Base Layer or biscuits for the marie biscuits
- 2.5 tbsp Butter melted
- 450 ml Milk for custard layer
- 2.5 tbsp Custard Powder vanilla or pineapple heaped
- 2 Sugar tablespoon as per preference
- 1 Pineapple lightly squeezed to remove excess syrup chunks tinned
- 1 packet Jelly we will use only a part of it raspberry
- 100 ml Cream fresh
- 2 tsp Sugar
- 1.5 Glazed Cherries
Instructions
Prepare the Biscuit Base
- Crush the biscuits coarsely. Mix with melted butter until well combined. Press a tablespoon of the mixture into the bottom of individual dessert bowls. Refrigerate.
Make the Pineapple Custard Layer
- Heat milk and sugar in a saucepan. In a separate bowl, whisk together some of the warm milk with the custard powder to create a smooth paste. Pour this paste into the saucepan with the remaining milk and sugar. Simmer gently until the custard thickens, stirring constantly. Remove from heat and let cool completely. Once cooled, gently stir in some pineapple chunks.
Assemble the Dessert
- Spoon the cooled custard layer over the biscuit base in each dessert bowl. Refrigerate until slightly set.
Prepare and Add the Jelly Layer
- Prepare the raspberry jelly according to package instructions. Allow to cool slightly until it begins to thicken. Spoon the cooled jelly over the custard layer.
Prepare and Add the Cream Topping
- Whip the cream with sugar until soft peaks form. Gently spoon a layer of whipped cream over the jelly in each bowl.
Chill and Garnish
- Refrigerate the assembled desserts for at least 10-15 minutes to allow the layers to set completely. Garnish with extra pineapple chunks and glazed cherries before serving.

- For a richer biscuit base, use digestive biscuits instead of Marie biscuits.
- If you don't have custard powder, you can substitute it with cornstarch or arrowroot powder. You'll need about 2-3 tablespoons, and it's vital to mix thoroughly to avoid lumps.
