  • In a heavy-bottomed pot, combine the kodo millet, chopped ginger, garlic cloves, cumin seeds, and fenugreek seeds.
  • Add 5 cups of water and salt. Stir well.
  • Bring to a boil over medium heat, stirring occasionally to prevent sticking.
  • Reduce heat to low and simmer until the kodo millet is cooked through and tender, approximately 20-25 minutes. Stir frequently to maintain consistency.

Adding Milk & Finishing

  • Stir in the milk and continue to cook on low heat, stirring frequently, until the porridge reaches your desired thickness. This should take about 5-7 minutes.
  • Remove from heat.

Serving

  • Serve the Kodo Millet Kanji hot. Garnish and enjoy with your favorite accompaniments, such as coconut chutney or red chili chutney.
