  • Wash the millets and lentils thoroughly. Soak them together in water for at least 4 hours. This helps soften them and ensures even cooking.

  • Drain the soaked millets and lentils. Combine them in a blender with the chopped ginger, green chilies, red chilies, onions, and salt.
  • Grind the mixture into a fine-coarse batter. The batter should be slightly smoother than a typical adai batter. Do not over-grind.
  • Transfer the batter to a bowl. Stir in the fresh curry leaves.
  • Heat a flat griddle or tawa over medium heat. Lightly oil the surface.
  • Pour a ladleful of batter onto the hot tawa. Spread it into a thin, round pancake using the back of the ladle in a circular motion.
  • Drizzle a little oil around the edges of the adai. Cook for 2-3 minutes, or until the underside is golden brown and crispy.
  • Flip the adai and cook the other side for another 2-3 minutes, until golden brown and cooked through.
  • Serve the hot, crispy adai immediately with your favorite chutney or avial.
