Ingredients

- 2 cup Great Millet Flour also known as jowar or sorghum flour. if using whole grains, grind into a fine flour.
- 1 tsp Salt or to taste
Wet Ingredients
- 2 cup Water for soaking, plus ½ - ¾ cup to adjust consistency. use warm water for faster soaking.
Cooking Oil
- 3-4 tbsp Oil vegetable oil or coconut oil for cooking and greasing the pan. use a neutral-flavored oil.
Instructions
Prepare the Jowar Batter
- Soak the great millet flour in 2 cups of warm water for at least 12 hours, or preferably overnight. This allows the flour to fully hydrate and creates a smoother batter.
Blend the Batter
- Drain the soaked millet and rinse it thoroughly. Transfer to a blender and blend until you achieve a smooth, lump-free batter. Add more water, a little at a time, if necessary, to adjust consistency.
Season and Adjust Consistency
- Add salt and 1 tablespoon of oil to the batter. Mix well. Gradually add more water (up to ¾ cup) until you reach a consistency similar to thin pancake batter. It shouldn't be too thick or too thin.
Cook the Ghavan
- Heat a non-stick pan or griddle over medium heat. Lightly grease the pan with oil using a paper towel or brush.
Pour and Cook
- Pour 2-3 tablespoons of batter onto the hot pan for each crepe. Immediately spread the batter into a thin, even circle using the back of a spoon or a spatula.
