Ingredients
 

For the Dough

  • 1 cup Fenugreek Leaves packed loosely; finely chopped, fresh
  • 2 cup Whole Wheat Flour whole
  • 1/2 cup Yogurt curd; adjust as needed for dough consistency
  • 1 tsp Salt or to taste
  • 1-2 tbsp Water as needed to make a soft dough
  • 2 tbsp Ghee for cooking the parathas

For Serving (Optional)

  • 1 Eggplant also known as brinjal; sliced and fried or roasted
  • 1/2 cup Yogurt for serving

Instructions
 

Prepare the Dough

  • Combine the chopped fenugreek leaves, whole wheat flour, yogurt, and salt in a large bowl.
  • Gradually add water, mixing with your hands until a soft, pliable dough forms. Knead the dough for 5-7 minutes until smooth and elastic.
  • Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Roll and Cook the Parathas

  • Divide the dough into equal-sized balls.
  • Roll each ball into a 6-inch circle using a rolling pin.
  • Heat a lightly oiled griddle or flat pan over medium heat.
  • Cook each paratha for 2-3 minutes per side, or until golden brown and slightly puffed up. Brush with ghee or oil during cooking for added flavor and texture.

Serve

  • Serve the hot Fenugreek Parathas with fried eggplant (brinjal) and a dollop of plain yogurt, or enjoy them with your favorite curry or pickle.
