For the Patties

  • 1 tbsp Oil use a high smoke point oil like coconut or avocado oil

Prepare the Chana Dal

  • Soak the chana dal in water for 4-5 hours. Drain and grind into a smooth paste along with the green chilies. Add the chopped coriander, ginger-garlic paste, salt, and turmeric powder (if using). Mix well.

Prepare the Semolina Dough

  • Bring water to a boil in a pan. Slowly add the semolina, stirring constantly to prevent lumps. Continue stirring until a smooth, slightly sticky dough forms. Remove from heat and let it cool completely.

Assemble and Cook the Patties

  • Once the dough is cool, mix in the chana dal paste. Make small balls from the dough. Roll each ball into a thin, oval patty.

Steam and Fry

  • Steam the patties for about 10-12 minutes, or until the chana dal is cooked through and the patties are firm. Let them cool slightly.

Finish and Serve

  • Cut the steamed patties into smaller pieces. Heat the oil in a pan over medium heat. Add the mustard seeds and let them splutter. Add the curry leaves and green chilies. Fry for about a minute. Add the cut patties and fry until slightly crispy and heated through (optional).
