Ingredients
Dry Ingredients
- 1 Tbsp Cocoa Powder i used kalya brand
- 1 Tbsp All-Purpose Flour or whole wheat flour
- 1 pinch Salt
- 1 pinch Baking Powder
Mix-Ins
- 1/2 tsp Chocolate Chips or mixed chopped nuts
Instructions
- In a small bowl, whisk together the cocoa powder, flour, salt, and baking powder.
- Add the jaggery (or honey), softened butter, and milk to the dry ingredients. Mix until just combined. Be careful not to overmix.
- Stir in the chocolate chips or chopped nuts.
- Place a small piece of parchment paper on a microwave-safe dish. Spoon the cookie dough onto the parchment paper, forming two small mounds.
- Microwave on high for 30 seconds. Carefully open the microwave door (it will be hot!), close it, and microwave for another 15 seconds. Repeat this process once more, microwaving for a final 5-10 seconds. Microwaving in short bursts prevents burning and ensures even cooking.
- Let the cookies cool on the parchment paper for about 2 minutes. This allows them to set and become slightly crispy on the outside.
- Carefully peel the parchment paper from the bottom of the cookies. Serve warm and enjoy!
Recipe Notes
Expert Tips
- For a richer flavor, consider using bone-in chicken thighs instead of boneless, skinless breasts.
- Adjust the spice level to your preference by adding more or less chili powder or using a milder variety.
- If you don't have fresh cilantro on hand, you can substitute with parsley or omit it altogether.
Storage Instructions
- Store leftover chicken chili in an airtight container in the refrigerator for up to 3 days.
- Reheat gently on the stovetop or in the microwave.
