Prepare the Ingredients

  • Cut the pitted Medjool dates into small pieces.
  • Cut the almonds, cashews, and pistachios into small, roughly uniform pieces.
  • Dry roast the almonds, cashews, and pistachios separately in a pan over medium heat until fragrant and slightly crisp. Set aside to cool.
  • Dry roast the poppy seeds in a separate pan until fragrant and crunchy. Set aside to cool.

Make the Date Paste

  • Grind the dates in a food processor until you obtain a smooth paste.

Combine and Shape

  • Heat the desi ghee in a non-stick pan over medium heat. Add the date paste and cook, stirring frequently, until it slightly thickens and comes together.
  • Add the roasted nuts and cardamom powder (if using) to the date paste. Mix well to combine.
  • Remove from heat and let the mixture cool slightly.
  • Lightly grease your hands with ghee or oil. Shape the mixture into a cylindrical log or into small barfi pieces.
  • Roll the burfi in the roasted poppy seeds to coat evenly.

Chill and Serve

  • Refrigerate the burfi for at least two hours to firm up.
