Ingredients
Dates
- 20 Medjool Dates pitted and soaked
Nuts & Seeds
- 1 cup Sesame Seeds roasted
- 0.5 cup Peanuts roasted and coarsely chopped
Sweeteners & Spices
- 0.5 cup Ghee clarified butter
- 2 tbsp Sugar powdered
- 1 tbsp Coconut Sugar
- 0.5 tsp Cinnamon ground
- 0.25 tsp Nutmeg ground
Instructions
- In a food processor, grind the pitted and soaked dates until a smooth paste forms. This creates the base for the sweet date bites.
- Heat the ghee in a pan over medium heat. Add the date paste, roasted peanuts, roasted sesame seeds, powdered sugar, coconut sugar, cinnamon, and nutmeg. Stir continuously. This helps the mixture to meld together and prevents burning.
- Continue to cook and stir until the mixture thickens and starts to pull away from the sides of the pan. This indicates that the moisture has evaporated, and the mixture is ready to be shaped.
- Remove the pan from the heat and let the mixture cool slightly. Lightly grease your hands with ghee to prevent sticking. Shape the mixture into small bite-sized balls or any desired shape.
- Allow the sweet date bites to cool completely before serving. Store in an airtight container at room temperature for up to a week.
Recipe Notes
Good To Know
- For extra crunch and flavor, lightly toast the sesame seeds and peanuts separately before mixing—this enhances their nuttiness and prevents the mixture from becoming soggy.
- If you prefer a vegan version, substitute desi ghee with coconut oil, which pairs well with the natural sweetness of dates and coconut sugar.
- Shape the mixture into small bite-sized balls or press into a lined tray and cut into bars for convenient snacking and attractive presentation at gatherings.
Expert Tips
- For a richer flavor profile, consider adding a pinch of cardamom or cinnamon to the mixture.
- If your dates are very dry, soak them in warm water for 10-15 minutes before processing to make them softer and easier to blend.
- These energy bites are highly customizable. Feel free to add other ingredients like dried cranberries, chopped apricots, or shredded coconut.
Storage Instructions
- Store these sweet dates in an airtight container in the refrigerator; they’ll stay fresh for up to two weeks and retain their crunchy texture.
