Ingredients
For the Gond (Edible Gum)
- 100 gm Edible Gum also known as gond
- 125 gm Ghee
For the Dry Roasting
- 25 gm Lotus Seeds also known as makhane
- 50 gm Cashews
- 50 gm Almonds
- 25 gm Chironji also known as charoli seeds
- 75 gm Melon Seeds
- 1 Coconut grated, dried
For the Sugar Syrup
- 350 gm Sugar
- 150 ml Water
- 1/4 tsp Cardamom Powder also known as elaichi powder
Instructions
Prepare the Gond
- Grease a flat tray and set aside.
- Heat 125g of ghee in a wok. Deep fry the gond until it fluffs up and doubles in size. Remove and set aside.
Dry Roast the Nuts and Seeds
- In the same wok, add 1 tsp of ghee and dry roast each of the following separately until fragrant and lightly browned: lotus seeds, cashews, almonds, chironji, melon seeds, and grated coconut. Set aside to cool.
Grind the Ingredients
- Coarsely grind the fried gond and the roasted nuts, seeds, and coconut. Set aside.
Make the Sugar Syrup
- In a clean pan, combine water, sugar, and cardamom powder. Cook over medium heat, stirring occasionally, until the syrup reaches a one- to two-string consistency (soft-ball stage).
Combine and Set
- Add the coarsely ground mixture to the sugar syrup. Stir vigorously until everything is well combined and the mixture thickens slightly.
- Quickly pour the mixture onto the prepared tray and spread it evenly to about 1/2 inch thickness. Let it cool completely.
- Once cooled, cut into square or diamond shapes.

- Store the Gond Burfi in an airtight container at room temperature.
