  • In a heavy-bottomed pan or kadai, combine the sugar and water. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves completely.
  • Continue to cook the sugar syrup until it reaches a one-string consistency. To test this, carefully dip your index finger and thumb into the syrup and gently pull them apart. A thin, single string of syrup should form. This indicates the correct consistency for the burfi.
  • Once the one-string consistency is reached, add the sifted all-purpose flour to the syrup. Stir continuously for 4-5 minutes to prevent lumps and ensure the flour is cooked through. The mixture will thicken considerably.
  • Stir in the ghee, vanilla extract, and food coloring (if using). Mix well to combine. The mixture will start to leave the sides of the pan. This indicates it's ready.
  • Pour the mixture onto the greased plate. Using a spatula, quickly spread and smooth the surface evenly. Let it cool slightly.
  • While the burfi is still warm, cut it into desired shapes using a sharp knife. Allow the burfi to cool completely before storing it in an airtight container. This helps maintain its texture and freshness.
