For the Wraps

For the Couscous Filling

  • 1 cup Couscous
  • 1 cup Water hot water
  • 1 Carrot finely chopped
  • 1/2 cup Peas fresh or frozen, half-boiled
  • 1 Tomato finely chopped
  • 1 tsp Salt to taste
  • 1 tsp Pepper ground, black
  • 1 tsp Chili Powder adjust to taste, red
  • 1 tsp Oil for cooking the vegetables

For the Hung Curd Dip

  • 1 cup Hung Yogurt greek yogurt, thick, strained yogurt
  • 1/2 tsp Salt to taste
  • 1/4 tsp Chili Powder optional, adjust to taste, red

Instructions
 

Prepare the Couscous

  • Soak the couscous in hot water for 10-15 minutes.

Make the Wraps

  • Combine whole wheat flour, salt, green chili paste, and spinach puree in a bowl.
  • Gradually add water, mixing until a soft dough forms.
  • Divide the dough into small balls and roll them into thin chapatis.
  • Cook the chapatis on a hot tawa (griddle) until lightly browned on both sides.

Prepare the Filling

  • Heat oil in a pan. Sauté the chopped carrots, peas, and tomatoes until tender.
  • Add salt, black pepper, and red chili powder; mix well.
  • Fluff the soaked couscous with a fork and add it to the cooked vegetables. Stir to combine.

Assemble the Wraps

  • Place a cooked chapati on a non-stick pan.
  • Spoon the couscous mixture onto the center of the chapati.
  • Fold the sides inward, then roll it up tightly.
  • Cook the wrapped couscous in a little oil until heated through.

Make the Hung Curd Dip

  • In a small bowl, combine hung curd (Greek yogurt), salt, and red chili powder (optional).
  • Mix well until smooth.

Serve

  • Serve the couscous spinach wraps immediately with the hung curd dip.

  • For a richer flavor, add finely chopped onions and garlic to the couscous filling.
  • If you don't have hung curd, you can use Greek yogurt or regular yogurt, but the consistency might be slightly different.
