For the Congee

  • 0.75 cup Rolled Oats goindiaorganic oats recommended
  • 0.25 cup Peas frozen, green
  • 2 cup Chicken Broth alternatively, or substitute with 1 cup cooked chicken, shredded, use 2 cups water + 1 tbsp chicken powder (or 1-2 stock cubes)

Seasoning & Flavor

  • 0.25 tsp Pepper ground, black
  • 1.5 tsp Salt adjust to taste; reduce if using pre-salted chicken broth or powder
  • 0.25 tsp Sesame Oil

Garnish

  • 3 tbsp Scallions finely chopped, also known as spring onions
  • 2 Eggs hard-boiled and sliced

Instructions
 

Prepare the Congee

  • Combine chicken broth (or water and chicken powder) in a heavy-bottomed pot.
  • Bring to a boil over medium-high heat.
  • Add green peas and oats.
  • Reduce heat to low, cover, and simmer for 15-20 minutes, or until oats are tender and the liquid has thickened to your desired consistency, stirring occasionally to prevent sticking.

Season and Finish

  • Stir in black pepper, sesame oil, and half of the chopped scallions.
  • Simmer for another 2-3 minutes to allow flavors to meld.

Serve

  • Remove from heat and transfer to bowls.
  • Garnish with sliced hard-boiled eggs and remaining scallions.
  • Serve hot.
