For the Halwa

  • 400 gm Beetroot peeled and grated
  • 4 cup Milk reduced-fat milk recommended
  • 60 gm Ghee
  • 100 gm Sugar adjust to your sweetness preference, granulated
  • 1 tsp Cardamom Powder freshly ground is best
  • 1 tsp Vanilla Extract pure vanilla extract recommended

Prepare the Milk

  • Reduce 4 cups of milk in a saucepan over medium heat until it is reduced by half. Stir occasionally to prevent burning.

Sauté the Beetroot

  • Heat 60g of ghee in a non-stick pan over medium-low heat. Add the grated beetroot and sauté for 5-8 minutes, stirring frequently, until it softens and releases its moisture.

Combine and Simmer

  • Pour the reduced milk into the pan with the beetroot. Bring to a boil, then reduce the heat to low. Simmer gently, stirring frequently, until the mixture thickens to a pudding-like consistency and most of the liquid has evaporated. This will take approximately 20-25 minutes.

Finish and Garnish

  • Stir in 100g of sugar, 1 tsp cardamom powder, and 1 tsp vanilla extract. Continue to cook and stir until the sugar dissolves and the mixture is smooth. Remove from heat and garnish with sliced cashews and raisins.
