Instructions

  • In a pan or kadai, heat the ghee over medium heat. This helps to prevent the halwa from sticking and adds a rich flavor.
  • Add the water chestnut flour and roast it, stirring constantly, until a fragrant aroma develops and the color slightly deepens. This step is crucial for removing any raw taste from the flour.
  • Add the chopped nuts and raisins. Sauté for a minute until they are lightly toasted.

  • Stir in the cardamom powder and jaggery. Adjust the amount of jaggery based on your desired level of sweetness. Mix well to combine.
  • Reduce the heat to low and gradually pour in the coconut milk while stirring continuously. This prevents lumps from forming and ensures a smooth halwa.
  • Continue to cook and stir until the halwa thickens and absorbs most of the coconut milk. The halwa is ready when it starts to leave the sides of the pan.
Creamy, savory Indian-style curry simmering in a stainless steel pan, ready to serve.
  • Remove from heat and serve the warm Water Chestnut Flour Halwa hot or warm. Garnish with extra chopped nuts if desired.

Recipe Notes

Expert Tips

  • For a richer flavor, use ghee instead of oil for roasting the nuts and semolina.
  • Adjust the sugar quantity according to your preference and the sweetness of the fruit used, if any.
  • To prevent the halwa from sticking to the bottom of the pan, stir it continuously, especially towards the end of the cooking process.

Storage Instructions

  • Store leftover halwa in an airtight container in the refrigerator for up to 3-4 days.
  • You can reheat the halwa gently in a microwave or on a stovetop before serving.
