Ingredients
Beetroot Preparation
- 2 medium Beetroot peeled and grated (approx. 2 cups grated)
Halwa Ingredients
- 1 cup Milk full cream milk recommended
- 2 tbsp Ghee clarified butter
- 1/2 tsp Cardamom Powder elaichi powder
- 1/4 cup Almonds roasted and roughly chopped
- 3/4 cup Sugar adjust to taste
Instructions
Prepare the Beetroot
- Wash, peel, and grate 2 medium beetroots.
Cook the Beetroot
- Heat 2 tablespoons of desi ghee in a heavy-bottomed pan over medium-low heat. Add the grated beetroot and sauté until the raw smell disappears and the ghee starts separating (approximately 10-12 minutes). Stir frequently to prevent sticking.
Add Milk and Simmer
- Pour in 1 cup of whole milk. Reduce the heat to low, and simmer, stirring continuously, until the beetroot is tender and the milk has reduced significantly, about 15-20 minutes. Scrape the sides of the pan to prevent sticking.
Incorporate Sugar and Spices
- Add 3/4 cup of sugar (adjust to your sweetness preference). Continue to stir until the sugar dissolves and the mixture thickens slightly.
Finish and Serve
- Once the halwa is glossy and starts to gather at the center of the pan, stir in 1/2 teaspoon of cardamom powder and 1/4 cup of roasted, chopped almonds. Drizzle with a little extra ghee. Remove from the heat.
- Garnish with additional roasted almonds and serve warm.
