Ingredients
Beetroot Preparation
- 500 gm Beetroot peeled and grated
Sweetener & Spices
- 200 gm Sugar adjust based on beetroot sweetness, or to taste
- 1 tsp Cardamom Powder green cardamom powder
Garnishing
- 2 tbsp Pistachios finely chopped
- 2 tbsp Almonds sliced or slivered
- 100 gm Mawa adds creaminess (can substitute with ricotta), optional
Instructions
Prepare the Beetroot
- Grate the beetroot and set aside.
Cook the Beetroot
- Heat the ghee in a heavy-bottomed pan or kadai over medium heat. Add the grated beetroot and cook for 5-7 minutes, stirring occasionally, until slightly softened.
Add Milk and Sugar
- Pour in the milk and bring to a simmer. Reduce the heat to low and cook, stirring frequently, until the milk reduces and thickens, about 15-20 minutes. Stir in the sugar and continue to cook until the mixture starts to resemble a halwa consistency.
Finish and Garnish
- Reduce the heat to low and stir in the cardamom powder. Cook for another 2-3 minutes. Remove from heat and stir in the chopped pistachios and almonds. Garnish with Khoya (if using).
Serve
- Serve the Beetroot Halwa warm or at room temperature. Enjoy!
