Ingredients
For the Halwa:
- 1 large Potato parboiled and peeled
- 1 tbsp Ghee
- 0.5 cup Sugar
- 150 grams Mawa mawa
- 0.75 cup Milk full cream
- 1.5 tbsp Gulkand rose petal preserve
- 2 tbsp Rose Petals dried, finely chopped
- 10 ml Rose Water
- 0.25 tsp Cardamom Powder ground green cardamom
- 15 grams Almonds and blanched, peeled, slivered
- 15 grams Pistachios and blanched, peeled, slivered
For Garnish:
- 5 grams Almonds and blanched, peeled, slivered
- 5 grams Pistachios and blanched, peeled, slivered
- 0.5 tbsp Rose Petals dried
Instructions
Prepare the Potatoes
- Grate the parboiled and peeled potato. Set aside.
Sauté the Potatoes
- Heat clarified butter in a heavy-bottomed non-stick pan. Add the grated potatoes and sauté for 5 minutes, stirring continuously.
Add Sugar and Khoya
- Add sugar and sauté for 3 minutes. Add the khoya and sauté for 2 minutes, until well combined.
Incorporate Milk and Flavors
- Add the milk and cook until it is absorbed. Stir in the gulkand, chopped rose petals, and rose water.
Add Nuts and Spices
- Add the almonds, pistachios, and cardamom powder; mix well.
Garnish and Serve
- Garnish with the remaining dried rose petals, slivered almonds, and pistachios. Serve hot or warm.
