Ingredients
 

Apples

  • 2 Apple 1 chopped, medium sized; 1 for puree

Dry Ingredients

Wet Ingredients & Sweetener

  • 1/3 cup Sugar (60g), brown
  • 1/2 cup Milk any milk will work (dairy or non-dairy)
  • 1 tsp Vinegar or lime juice, white

Garnish

  • 2 tbsp Walnuts chopped, for garnish
  • 1 tbsp Lemon Juice to prevent chopped apples from browning
  • Optional Sugar for dusting, powdered

Instructions
 

Prepare the Oats and Dry Ingredients

  • Grind rolled oats coarsely in a food processor or blender. In a large bowl, whisk together the ground oats, whole wheat flour, baking soda, baking powder, cinnamon, and salt.

Prepare the Apples

  • Wash and thoroughly dry the apples. Peel both apples. Finely chop one apple and toss with lemon juice to prevent browning. Puree the other apple with the brown sugar in a blender or food processor until smooth.

Combine Wet and Dry Ingredients

  • In a separate bowl, combine the pureed apple mixture and milk. Add the vinegar (or lime juice). Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.

Bake the Cake

  • Gently fold in the chopped apples. Pour the batter into a greased and floured 8-inch baking pan. Sprinkle with chopped walnuts.
  • Preheat your oven to 350°F (175°C). Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Alternatively, you can bake in an air fryer at 160°C for 25 minutes.

Cool and Serve

  • Let the cake cool completely in the pan before dusting with powdered sugar (optional) and serving. Enjoy!
