Ingredients
For the Canapés
- 1 large Potato peeled and grated, sweet
- 1/2 cup Amaranth finely chopped, leaves
- 1/4 cup All-Purpose Flour can substitute with more amaranth flour if desired
- 4 tbsp Amaranth Flour
- 2 tbsp Gram Flour besan
- 1 tsp Sesame Seeds
- 1/2 tsp Salt
- 1/4 tsp Chili Powder or to taste, red
- 2-3 tbsp Water or as needed to form a dough
- 2 tbsp Clarified Butter ghee, for greasing the muffin tin
Optional Fillings
- Deviled Eggs mashed and seasoned
- Corn cooked and seasoned
- Hummus
- Salad your favorite combination
- Pizza Stuffing
Instructions
Prepare the Sweet Potato
- Squeeze out excess water from the grated sweet potato using a clean kitchen towel or cheesecloth.
Make the Dough
- In a large bowl, combine the squeezed sweet potato, amaranth leaves, amaranth flour, all-purpose flour, gram flour, sesame seeds, salt, and red chili powder.
- Mix well to form a soft, pliable dough. Add water, a tablespoon at a time, if needed, to achieve the right consistency.
Prepare the Muffin Tin
- Lightly grease a 6-cup muffin tin with ghee or oil.
Shape and Bake
- Divide the dough into 6 equal portions. Roll each portion into a small ball, then flatten slightly into a circle.
- Place each circle into a muffin cup, pressing it firmly against the bottom and sides to form a small cup.
- Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until golden brown and cooked through.
Cool and Fill
- Remove the canapés from the oven and let them cool completely in the muffin tin before carefully removing them.
- Once cooled, fill the canapés with your choice of filling and serve immediately or store in an airtight container in the refrigerator for later.
