Prepare the Sweet Potato

  • Squeeze out excess water from the grated sweet potato using a clean kitchen towel or cheesecloth.

Make the Dough

  • In a large bowl, combine the squeezed sweet potato, amaranth leaves, amaranth flour, all-purpose flour, gram flour, sesame seeds, salt, and red chili powder.
  • Mix well to form a soft, pliable dough. Add water, a tablespoon at a time, if needed, to achieve the right consistency.

Prepare the Muffin Tin

  • Lightly grease a 6-cup muffin tin with ghee or oil.

Shape and Bake

  • Divide the dough into 6 equal portions. Roll each portion into a small ball, then flatten slightly into a circle.
  • Place each circle into a muffin cup, pressing it firmly against the bottom and sides to form a small cup.
  • Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until golden brown and cooked through.

Cool and Fill

  • Remove the canapés from the oven and let them cool completely in the muffin tin before carefully removing them.
  • Once cooled, fill the canapés with your choice of filling and serve immediately or store in an airtight container in the refrigerator for later.
