Ingredients
For the Red Amaranth Puree:
- 1 bunch Amaranth Leaves lal sag, red
- 1 tbsp Ghee
For the Mousse:
- 4 tbsp Milk Powder amul or similar brand
- 3 tbsp Sugar powdered
- 3 tbsp Nolen Gur also known as naren gud, date palm jaggery
- 1/4 tsp Cinnamon ground
- 2 tbsp Almond Paste or other nut paste
- 4 tbsp Heavy Cream amul fresh cream or similar
For Decoration (Optional):
- 1/2 cup Cream for decoration, whipped
- 2 tbsp Sugar Candy for decoration
- 1/4 cup Water for adjusting consistency
Instructions
Prepare the Red Amaranth Puree
- Heat 1 tbsp of desi ghee in a pan or kadai. Add the red amaranth leaves and cook for 7 minutes, stirring occasionally, until wilted.
- Remove from heat and let cool slightly. Puree the cooked leaves using a blender or food processor until smooth. Strain the puree to remove any fibers for a smoother texture.
Make the Mousse
- In a clean pan, combine the red amaranth puree, milk powder, powdered sugar, nolen gur, almond paste, and ground cinnamon.
- Cook over medium heat, stirring constantly, until the mixture thickens into a halwa-like consistency (about 5-7 minutes). Add a small amount of water if needed to adjust consistency.
- Remove from heat and let cool completely. Once cool, gently fold in the heavy cream until well combined.
Assemble and Serve
- Spoon the mousse into serving glasses or bowls. Top with whipped cream and sugar candy, if desired.
- Chill for at least 30 minutes before serving to allow the flavors to meld and the mousse to set.
