For the Beetroot Hummus

  • 1 Beetroot medium-sized, roasted
  • 1/2 cup Chickpeas canned or homemade, cooked kabuli chana
  • 1 Lemon zest and juice of one large lemon
  • 2 clove Garlic
  • 1/2 tsp Pepper black, freshly ground, optional
  • 1.5 tsp Salt or to taste
  • 1/4 cup Virgin Olive Oil extra
  • 2-3 tbsp Water to adjust hummus consistency

Roast the Beetroot

  • Preheat your oven to 400°F (200°C). Wash and scrub a medium beetroot, then wrap it tightly in foil. Roast for 45-60 minutes, or until tender when pierced with a fork. Let cool completely before peeling and quartering.

Prepare the Beetroot Hummus

  • Add the quartered beetroot to a food processor or blender. Pulse until finely chopped.
  • Add cooked chickpeas, lemon zest, lemon juice, garlic, salt, pepper, and olive oil. Blend until completely smooth, adding a tablespoon or two of water at a time if needed to reach desired consistency.
  • Taste and adjust seasoning as needed.

  • Slice the cucumbers into 1/2-inch thick rounds.
