Ingredients
Noodles & Cooking Liquid
- 70 gm Wheat Noodles whole
- 5 cup Water
- 1 tsp Salt or to taste
- 1/2 tsp Pepper black, freshly ground, optional
- 1/2 tsp Pepper Flakes or to taste, red
- 1 tsp Olive Oil
Vegetables
- 1 Bell Peppers finely chopped, green
- 1 Tomato finely chopped, seeds removed
- 1/2 cup Cabbage shredded
Cheese Sauce
- 4 tbsp Butter unsalted
- 1 tsp Garlic minced
- 4 tbsp Whole Wheat Flour whole
- 2 cup Milk cold whole milk
- 1 cup Cheddar Cheese grated, or your preferred melting cheese
- 1/4 cup Mozzarella Cheese for topping, grated
- 1/2 tsp Pepper Flakes red
- 1/2 tsp Oregano dried
Instructions
Prepare the Noodles
- Boil 5 cups of water with 1 teaspoon of olive oil, 1/2 teaspoon salt, and 1/2 teaspoon of red pepper flakes. Add the whole wheat noodles and cook for 10 minutes, or until al dente. Drain well and rinse with cold water.
Make the Cheese Sauce
- Melt the butter in a saucepan over medium heat. Add the minced garlic and cook for 1 minute. Whisk in the whole wheat flour and cook for 1 minute more, stirring constantly. Gradually whisk in the cold milk until smooth.
- Bring to a simmer, stirring constantly, until the sauce thickens. Reduce heat to low and stir in the cheddar cheese, red pepper flakes, and oregano until melted and smooth.
Assemble and Bake
- Stir the cooked noodles into the cheese sauce. Add all but 2 tablespoons of the chopped vegetables. Season to taste. Pour the noodle mixture into a greased oven-safe dish.
- Top with the remaining vegetables and the mozzarella cheese. Bake at 375°F (190°C) for 25-30 minutes, or until golden brown and bubbly. Let cool slightly before serving.
