  • 1/2 tsp Asafoetida hing

  • Wash and roughly chop the cauliflower greens. If using, peel, wash, and dice the potato into ½-inch cubes.

Stir-frying the Greens

  • Heat 1 tablespoon of oil in a wok or large skillet over medium heat. Add the asafoetida and sauté for 30 seconds until fragrant. Add the green chilies and minced garlic, sautéing for another minute until fragrant and lightly browned.

Combining and Cooking

  • Add the chopped cauliflower greens and potatoes (if using) to the wok. Stir well to combine with the spices and oil. Add salt to taste. Cover the wok and cook for 10-15 minutes, stirring occasionally, until the greens are tender.
