Ingredients
 

Bottle Gourd Preparation

  • 500 gm Bottle Gourd lauki/ghiya, peeled, and grated, seeded

Milk and Sweetener

  • 1 ltr Milk full-fat milk recommended for creaminess
  • 100 gm Sugar adjust to taste

  • 2 tbsp Ghee for sautéing the bottle gourd
  • 1 tbsp Mawa optional, for added richness

Prepare the Bottle Gourd

  • Wash, peel, and deseed the bottle gourd. Grate it finely using a grater.

Cook the Milk and Nuts

  • In a heavy-bottomed pan, combine the milk, sugar, and cardamom powder. Bring to a simmer over medium heat. Add the slivered almonds and chopped cashews. Simmer gently, stirring occasionally, for about 10-15 minutes until the milk slightly thickens.

Sauté the Bottle Gourd

  • Heat the ghee in a separate pan. Add the grated bottle gourd and sauté until it turns light golden brown. This helps to remove excess moisture and enhances the flavor.

Combine and Simmer

  • Add the sautéed bottle gourd to the milk mixture. Stir well and simmer for another 10-15 minutes, stirring frequently, until the kheer reaches your desired consistency. Stir in the chopped pistachios and optional mawa during the last few minutes of cooking.

Cool and Serve

  • Remove from heat and let the Ghiya Kheer cool completely. Once cooled, serve chilled or at room temperature. Garnish with extra chopped nuts if desired.
