Ingredients
For the Bottle Gourd Mixture
- 1 Bottle Gourd medium-sized; peeled, and grated (approximately 2 cups grated), washed
- 3 cup Milk
- 1 cup Mawa fresh or store-bought, khoya
- 1 cup Sugar adjust to your sweetness preference, granulated
Flavorings and Garnish
- 1 tbsp Ghee
- 2 tsp Cardamom Powder finely ground
- 1/4 tsp Food Coloring optional, for a richer color. use gel food coloring for best results., yellow
- 1/4 cup Almonds slivered or chopped
Instructions
Prepare the Bottle Gourd
- Peel, wash, and grate the bottle gourd.
Cook the Gourd Mixture
- In a heavy-bottomed pan, combine the grated bottle gourd, full-fat milk, and food coloring (if using). Cook over medium heat, stirring frequently, until the mixture thickens considerably and most of the moisture evaporates. This will take about 20-25 minutes.
Add Sugar and Mawa
- Stir in the sugar and mava. Continue cooking and stirring constantly until the mixture comes together and forms a thick, cohesive mass. This stage requires patience and continuous stirring to prevent burning.
Incorporate Flavorings
- Remove from heat. Stir in the cardamom powder and desi ghee. Mix thoroughly until well combined.
Set and Garnish
- Grease a flat tray or thali lightly with ghee. Pour the mixture onto the tray and spread it evenly. Garnish with chopped almonds. Allow the burfi to cool completely and set at room temperature for at least 3-4 hours or until firm.
Cut and Serve
- Once completely set, cut the burfi into square or diamond shapes. Store in an airtight container at room temperature for up to 5 days.
