Batter
- 1 packet Appam Batter freshly ground, such as farmz2familiez

- In a bowl, combine the appam batter, sugar (if using), and salt.
- Gradually whisk in the water until the batter is smooth and pourable. A slightly thinner batter will yield crispier appam.
- Heat an appam pan (appachatti) over medium-high heat. Lightly grease the pan with a drop of oil or cooking spray.
- Pour about 1 1/2 ladles of batter into the hot pan. Quickly swirl the pan in a circular motion to spread the batter thinly and create the signature lacy edges.
- Cover the pan and cook for 2-3 minutes, allowing the edges to become crispy and the center to cook through.
- Reduce the heat to low and uncover the pan. Cook for another 1-2 minutes to evaporate any excess moisture on the surface. This ensures a light and fluffy texture.
- Carefully remove the cooked appam from the pan using a spatula.
- Repeat the process with the remaining batter, lightly greasing the pan between each appam.
