Instructions

Prepare the Potatoes

  • Wash and thoroughly dry 4 medium russet potatoes. Lightly brush them with 2 tablespoons of olive oil and season generously with salt.
  • Bake the potatoes at 350°F (175°C) for 1 hour, or until tender.

Create the Cheese Filling

  • Once the potatoes are cool enough to handle, carefully cut them in half lengthwise. Scoop out the flesh, leaving about a 1/4-inch border. Roughly mash the potato flesh.
  • In a bowl, combine the mashed potatoes with 1 cup shredded mozzarella cheese, 1/2 cup cottage cheese, 1/4 cup sour cream (optional), 1 teaspoon pizza seasoning, 1/2 teaspoon chili flakes, 1/4 teaspoon black pepper, and 1 teaspoon salt. Mix well.

Fill and Bake Again

  • Spoon or pipe the cheese mixture back into the potato skins. Place the filled potatoes on a baking sheet.
  • Bake at 400°F (200°C) for 15-20 minutes, or until the cheese is melted, bubbly, and lightly browned.

Serve

  • Let cool slightly before serving. Enjoy!

Recipe Notes

Expert Tips

  • For extra flavor, consider adding a sprinkle of grated Parmesan cheese to the cheese filling.
  • If you don’t have a piping bag, you can use a spoon or a zip-top bag with a corner snipped off to fill the potato skins.
  • For crispier potatoes, broil the filled potatoes for the last 2-3 minutes of baking.
  • Feel free to adjust the amount of chili flakes to your preference. If you like extra heat, add more!
