Potatoes & Oil
- 4 Russet Potatoes about 1 pound total, medium size
- 2 tbsp Olive Oil
Cheese Filling
- 1 cup Mozzarella Cheese shredded
- 1/2 cup Cottage Cheese
- 1/4 cup Cream for extra creaminess, optional, sour
Seasonings
- 1 tsp Pizza Seasoning
- 1/2 tsp Chili Flakes or to taste
- 1/4 tsp Pepper black, freshly ground
- 1 tsp Salt or to taste
Instructions
Prepare the Potatoes
- Wash and thoroughly dry 4 medium russet potatoes. Lightly brush them with 2 tablespoons of olive oil and season generously with salt.
- Bake the potatoes at 350°F (175°C) for 1 hour, or until tender.
Create the Cheese Filling
- Once the potatoes are cool enough to handle, carefully cut them in half lengthwise. Scoop out the flesh, leaving about a 1/4-inch border. Roughly mash the potato flesh.
- In a bowl, combine the mashed potatoes with 1 cup shredded mozzarella cheese, 1/2 cup cottage cheese, 1/4 cup sour cream (optional), 1 teaspoon pizza seasoning, 1/2 teaspoon chili flakes, 1/4 teaspoon black pepper, and 1 teaspoon salt. Mix well.
Fill and Bake Again
- Spoon or pipe the cheese mixture back into the potato skins. Place the filled potatoes on a baking sheet.
- Bake at 400°F (200°C) for 15-20 minutes, or until the cheese is melted, bubbly, and lightly browned.
