  • Add the chopped tomatoes and green chilies to the pan. Cook until softened. Stir in the ginger and garlic, sautéing for a minute until fragrant. Then, add sugar, salt, coriander powder, red chili powder, and turmeric powder. Cook for a few minutes until the spices are fragrant.
  • Once the masala starts releasing oil, add the green peas and roasted eggplant. Mash the eggplant well, incorporating it into the spice mixture. Stir in the dry mango powder.
  • Continue cooking until the peas are tender and the flavors have melded together. Stir in the salted butter. This adds richness and helps to mellow the spices. Remove from heat.
  • Garnish with freshly chopped coriander leaves. Serve hot with roti, paratha, or naan.

Recipe Notes

Good To Know

  • For an extra smoky flavor, roast the brinjals directly over an open flame until the skin is charred. Immediately cover them in a bowl for 5 minutes—the steam will help the skin peel off easily and intensify the smokiness.
  • If you prefer a milder version, deseed the green chilies before adding, or substitute with a small amount of Kashmiri red chili powder for vibrant color without overwhelming heat.
  • Add a handful of chopped fresh coriander and a squeeze of lemon just before serving to amplify the tangy notes and give a fresh burst of flavor.
  • Leftover bharta can be used as a delicious filling for wraps or sandwiches—just spread it on bread or inside a paratha and grill for a quick, savory snack.

Expert Tips

  • Don't overcook the brinjals when roasting or sautéing, as this can make the bharta mushy. Aim for a tender texture that still holds its shape slightly.
  • Adjust the amount of spices to your liking. Start with a smaller amount and add more gradually until you achieve the desired level of heat and flavor.
  • For a richer flavor, use mustard oil for sautéing the onions and other ingredients.

Storage Instructions

  • Store leftover baingan bharta in an airtight container in the refrigerator for up to 3 days. Gently reheat before serving.
