Ingredients
For the Eggplant
- 1 kg Eggplant also known as brinjal. large, peeled and cut into 2-inch cubes, ripe eggplant
For the Spice Blend
- 1 tbsp Turmeric Powder haldi
- 1.5 tsp Salt or to taste
- 0.25 tbsp Chili Powder adjust to your spice preference. also known as red chilly powder., red
- 1 tbsp Garam Masala
For the Sauté
- 2 tbsp Vegetable Oil
- 1 tbsp Cumin Seeds jeera
- 4 Onions finely chopped
- 4 Tomatoes finely chopped
- 2 Chilies finely chopped. adjust quantity to your spice preference., green
For Garnish
- 1 tbsp Coriander chopped, for garnish
Instructions
Prepare the Eggplant
- Boil the eggplant cubes in a pressure cooker for 2 whistles. Allow to cool, then mash thoroughly.
Sauté the Aromatics
- Heat the oil in a pan over medium heat. Add the cumin seeds and sauté until they splutter.

- Add the chopped onions and sauté until golden brown. Add the chopped tomatoes and green chilies, and stir for 2 minutes.
