Prepare the Potatoes

  • Boil the potatoes until tender. Peel and mash them thoroughly using a fork or potato masher.

Make the Tempering

  • Heat vegetable oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they begin to splutter, add the red chilies and saute for a few seconds until fragrant.

Sauté the Onions

  • Add the thinly sliced onions to the pan and sauté until they turn light golden brown.

Combine and Cook

  • Add the mashed potatoes and salt to the pan. Mix everything well to combine. Cook for 3-4 minutes, stirring occasionally, until heated through and slightly dry. The potatoes should be well coated with the spices and oil.

Garnish and Serve

  • Stir in the chopped cilantro. Serve hot as a side dish with rice, roti, or naan.

Recipe Notes

Expert Tips for the Best Aloo Bharta

  • For extra flavor, add a squeeze of lemon juice at the end.
  • If you prefer a smoother texture, use a potato ricer instead of a fork to mash the potatoes.
  • Don't overcook the potatoes; they should be soft but not mushy.
  • Feel free to adjust the amount of red chilies according to your spice preference. You can also add a pinch of garam masala for a more complex flavor profile.
