Ingredients
For the Potatoes
- 4 Potatoes boiled and peeled, medium-sized
For the Spice Tempering
- 2 tbsp Ghee
- 1 tsp Cumin Seeds jeera
- 1 tsp Asafoetida hing
- 2 Chilies finely chopped, green
- 1 tbsp Garlic finely chopped
- 1 tsp Chili Powder red
- 1 tbsp Coriander Powder dhania
Other Ingredients
- 2 Tomatoes chopped (green or red)
- 1.5 tsp Salt or to taste
- 1 tbsp Lemon Juice
- 1 tbsp Coriander dhania, chopped, for garnish
Instructions
Prepare the Potatoes
- Boil and peel the potatoes. Grate them using a large-holed grater.
Make the Spice Tempering
- Heat the desi ghee in a pan over medium heat. Add the cumin seeds and asafoetida; sauté for a few seconds until fragrant.
Sauté Aromatics and Spices
- Add the chopped garlic and green chilies. Sauté for about 30 seconds until fragrant. Stir in the red chili powder and coriander powder, and sauté for another 30 seconds.
Add Tomatoes and Cook
- Add the chopped tomatoes and cook until they soften slightly, about 5 minutes. Season with salt.
Combine Potatoes and Finish
- Add the grated potatoes to the pan. Cook, stirring occasionally, until the potatoes are heated through and slightly browned. Stir in the remaining desi ghee and lemon juice.
